Key ideas in Cooking Rice Well
- Rice grains absorb roughly equal volume of water (a 1:1 ratio) regardless of batch size
- Extra water in standard recipes is solely there to replace what evaporates into the air while cooking
- A small pot loses far less water to evaporation than the 2:1 rule assumes, leaving the excess water to turn small batches gummy
- A sealed lid traps the pocket of steam and heat necessary to cook rice evenly to the top
- Lifting the pot lid dumps the trapped steam and drops the internal temperature, which disrupts hydration and can leave grains chalky or undercooked
- Vigorous boiling evaporates water too quickly from the bottom before the top layer has time to absorb moisture
- Dropping the flame to the lowest setting the moment a boil is reached lets heat gently steam the whole pot without scorching the bottom
- Immediately after simmering, the bottom of the pot is wettest while the top layer is still slightly dry
- Leaving the pot covered off the heat for 10 minutes lets steam circulate and equalize moisture throughout the whole pot
- Fluffing should only happen after the rest is complete, once all grains have finished setting
- Milling rice leaves behind a layer of loose, powdery surface starch on each grain
- If not rinsed away, this loose surface starch dissolves into the cooking water and thickens it into a gummy paste
- Rinsing until the water runs mostly clear helps cooked rice emerge fluffy with distinct grains
- Raw rice grains are brittle and easily fracture if crushed or scrubbed aggressively
- Cracking grains opens up the interior, releasing fresh inner starch into the water
- Gentle swirling washes away loose outer powder without breaking the grains

Here's what playing it feels like
A real question from this course. Take your best guess.
If rice only drinks water at a 1:1 ratio, why do standard recipes call for two cups of water for one cup of rice?
